Who doesn’t love a good Mexican!? This is one of our favourite go-to camp meals that the whole family loves. We’ve whipped this up for our mates at BCF and wanted to share it here too. We love this ‘one-pot wonder’ recipe as you can serve it in so many different ways and if you’re missing an ingredient, simply swap it for something else!! Bon Appetit!

Ingredigents
- 500g Beef Mince
- 1 Can of Crushed Tomatos
- 1 Can of Red Kidney Beans
- 1 Can of Black Beans
- 1 Small can of Sweet Corn
- 1 Pkt of Mexican Taco Mix or Swap this out for x1 Tablespoon of Cumin and x1 Tablespoon of Tumeric
I also like to add in some chopped carrot and capsicum if I have it.
Method
Brown the mince then add in the tomatos and beans (we like to drain and rinse them first), then add in the Taco Mix.
If needed add a little water and mix until all cooked through. You can also add in some chilli if you like it spicy.
We like to serve this on Tacos, with rice, in wraps or on toast. Or if you want to get fancy you can use it for Mexican pies or enchiladas.
